Inevitably the laughter ends with someone crying and getting upset and I'm forced to leave my secure haven and meet the needs of the kids. But no matter. I had my few moments of enjoyment and then it is back to mommy business.
But that initial sweetness is so perfect and wonderful - like these cupcakes. They are moist, lightly peachy, and simply taste of laughter and the sweetness of summer.
I bought these dehydrated peaches at Target. Pulverize the peaches right before they are needed, as they really like to suck the water out of the air.
Peach Cupcakes with Peach Cream Cheese Frosting
Makes 24 cupcakes
Peach Cake
Ingredients
1 cup (2 sticks) unsalted butter, softened
2 ⅔ cups all-purpose flour
2 ½ teaspoons baking powder
1/2 teaspoon salt
2 cups granulated sugar
3 large eggs
1.75 oz (49 grams) freeze dried peaches, pulverized in a mini food processor
3/4 cup low-fat buttermilk
1/2 cup pureed fresh peach
1 teaspoon pure vanilla extract
Method
Preheat oven to 350 degrees. Line cupcake tins with liners.
Mix together flour, baking powder, and salt. Set aside. In a large measuring cup or bowl, mix together buttermilk, peach puree and vanilla extract. Set aside until needed.
Using an electric mixer, beat butter and granulated sugar in a mixing bowl until pale, about 2 minutes. Add eggs one at a time, mixing well after each addition. Mix in pulverized peaches.
Mix in flour mixture in three batches, alternating with two batches of buttermilk mixture. Mix until just combined, scraping down bowl as needed. (I like to mix the last bit by hand using a spatula to make sure I get all the stuff at the bottom.) Scoop batter into cupcake tins.
Bake until golden brown and a toothpick inserted into center of cake comes out clean, about 21 to 24 minutes. Allow cupcakes to cool in tins for 10 minutes, and then remove cupcakes and place them on a cooling rack.
Peach Cream Cheese Frosting
Makes enough to frost 24 cupcakes
Ingredients
1 cup of butter, softened
8 oz of cream cheese, softened
1.75 oz (49grams) freeze dried peaches (Target has Archer Farms brand), pulverized in a mini food processor
1 teaspoon vanilla extract
3-5 cups of confectioners sugar
Method
In a large mixing bowl, mix butter until it is softened and uniform. Add cream cheese and beat together until it is uniform. Add vanilla extract and mix. Add pulverized peaches and mix. Add 3 cups of sugar to the mixture and mix. Add more sugar if necessary. Mix again until mixture is creamy and spreadable. Add more sugar if necessary, otherwise prepare to frost cake.

My kids are still very small but on some weekend morning instead of us getting up to get them, they get up and climb into bed and cuddle with us until we're all ready to get up. Could fresh peaches--pulverized--fill in for the freeze-dried ones? I've got a LOT of fresh peaches.
I was wondering the same thing, if you could use fresh peaches in place of the dry ones?
the dried peaches...add intense flavor WITHOUT excess liquid. That is the main reason I use them. In the frosting, if you do use fresh peaches, you are essentially going to need more sugar in order to combat it, which is not what I prefer. I like a less sweet flavor but with a stiffer frosting.
Within the batter, you may have some more room - perhaps cutting down some of the buttermilk and increasing peach puree, but you will lose the extra punch of flavor. Hope that helps. :)
Just made these...they're FANTASTIC!!! But I couldn't get the icing thick enough without adding a TON of powdered sugar. Who cares, they're GREAT!!!

I made your cupcakes into a cake for my mom's birthday. Yum!! I loved the subtle peach taste. I only had 1 bag of peaches from Target, so I used 3/4 in the cake and 1/4 in the icing. It wasn't as "peachy" but it was still mighty tasty! Thanks for the great recipe!!

I'm planning on trying this recipe out sometime in the next week. Alas, we do not have a Target anywhere near here. I was able to find a package of Sun-Maid dried peaches locally, but I don't think they're as dried out as freeze dried peaches would be. Any advice on how to proceed? Try to chop the sort-of-a-little moist dried peaches as-is? Try to dry them out more in the oven first? Help!
dried peaches will not work, as this is FREEZE dried peaches that are used in this recipe. They can pulverize into a powder, while dried peaches cannot.
I've seen the freeze dried peaches at Whole Foods as well.

I used freeze dried peaches as well and mine were incredibly dense also, I think that's just how they turn out.
definitely they don't come out dense. This is a lighter cupcake.
A couple things to check - make sure you are using baking POWDER and not baking soda. And the second thing to check is to make sure that the powder is not expired.
Otherwise - I'm not sure what the problem is. I'll have to make these again to make sure that they are working correctly.

having a hard time finding any dried peaches in my area...could a peach jello mix be used instead? or peach flavor oil?
I'm another person who found this recipe on pinterest! I made this into a cake instead of cupcakes. I haven't tried it yet but I did nibble on some of the crumbs and stick my finger in the icing bowl (classy, I know!) Anyway, from what I tasted, this recipe is a keeper. AWESOME peach flavor! It did turn out pretty heavy rather than dense but not complaining a bit. The taste was phenomenal! It's probably due to making a cake instead of cupcake.
Maybe your peaches weren't ripe enough for the purée, I made these today and they were amazing super light and fluffy and amazingly peachy sounds like user error to me, baking is very precise gotta do things right. I think maybe u just don't have the guts to admit that u messed up
I made these last night, thanks to Pinterest, and they are absolutely delicious. I live alone and didn't want to feel tempted to eat them all so I brought them in to work and they were devoured before lunchtime! Perfect!

you can simply halve the recipe - you'll end up with fewer cupcakes so it doesn't affect much else.

the color of the frosting will depend on the overall color of freeze dried peaches. There are variances in how intense orange/yellow the freeze dried peaches are which affects the color. If you don't want it to be more peach color, you have two possible solutions - one is to go ahead and add a drop of food coloring or the other, is as some of you have proposed, is to go ahead and more freeze dried peaches. Either way, you'll get a peachier color.
